Head Chef l Kelly Delaney
Born in New South Wales and raised in Adelaide, Kelly’s passion for authentic Italian food began in 1997 when she moved to Melbourne and discovered a world of Italy at her doorstep. Her friend opened a restaurant where she began her first professional cooking experience. Later Kelly threw herself in the deep-end and leased the kitchen of a small hotel called Mona Castel located in the outskirts of Melbourne, which enabled her to cultivate her skills further.
Italian chef Maurice Esposito, who imparted a wealth of knowledge in cooking recipes of his homeland was Kelly's mentor along with his mother, who also shared deep-rooted secrets by frequently visiting the restaurant and teaching everything to her from scratch.
“After working with Maurice at Stokehouse Restaurant and then later at Sarti, he remains my number one mentor and inspiration”.
At Auge, Kelly uses traditional cooking methods and techniques from her rich Italian education. Kelly has a passion for fresh produce and believes in sourcing the best quality ingredients found locally – and with many rich regions surrounding Adelaide she finds this particularly rewarding. Kelly also likes learning and discovering new recipes in a variety of avenues, which include eating-out with her partner, reading new and old cookbooks, searching YouTube and the web, and of course getting together with other chefs to share ideas.
Away from the olive oil and stove tops, Kelly values family time spent with her partner and three year old daughter Madison. She especially cherishes cooking with Madison who seems to share her love for the culinary art!
